Double Banana Bread Recipe

When I was a little girl, I used to love coming home from a long day of school, opening the door, and get greeted with the smell of sweet dough. My Dad wasn’t a huge baker, but he used to make these awesome biscuit boys. They were simple to make, but they were oh-so-good. My Mom didn’t bake a lot either, but she could make a mean chocolate cake. When I got married, I quickly learned how lucky I was to have a husband who loves to cook and bake. One of his favorite recipes we all love in this house is his banana bread. Every time he makes it, he puts a different twist on the original recipe. He will also slip in veggies and other healthy snacks, as well as chocolate to balance out the calories in his banana bread.

With Christmas just around the corner, we’ve been baking something fierce over here. Last week, we shared our Double Chocolate Nutella &#0Peppermint Thumbprint Cookies.

Today, I have the pleasure of sharing Derrick’s Banana Bread recipe with you all. As I mentioned, he makes it different every time, so this recipe called for extra bananas, giving it the name Double Banana Bread.

Usually, before we start baking, we check to make sure we have all of the essential ingredients. After making a quick trip to Meijer to grab flour and I Can’t Believe It’s Not Butter, we headed home to put this banana bread together.

Ingredients needed:

  • 6 oz I Can’t Believe It’s Not Butter
  • 1 cup of granulated sugar
  • 2 large eggs, at room temperature
  • 1 tbsp of pure vanilla extract
  • 1 1/2 cups of all-purpose flour
  • 1 tsp of baking soda
  • 1/2 tsp of sea salt
  • 1 1/3 cup of smashed ripe bananas
  • 1/2 cup Peanut Butter chips (or chocolate chips_
  • 1/2 cup Quaker Old Fashioned whole rolled oats
  • 2 tbsp of coconut oil
  • 3 slices of bananas for top

Directions:

In the bowl of a stand mixer, fitted with the paddle attachment, cream the butter, when the butter is whipped add the granulated sugar and mix well.

Add the two eggs and the vanilla extract and mix well. Then add the bananas (after mashing them in a separate bowl), sour cream and coconut oil and mix until ingredients are fully incorporated.

In a separate bowl sift together the remain dry ingredients. Flour, baking soda, and sea salt.

With the Kitchen Aid stand mixer set on low, begin adding the flour mixture a little at a time until both are just mixed.

Add the peanut butter chips (or chocolate chips) and whole rolled oats. Mix until just incorporated.

Butter a  9″x 5″ x 3″ bread pan, on the bottom of the bread pan, place a piece of parchment paper cut to fit, then butter the parchment paper.

Pour batter into bread pan. Slice three bananas and lay them on top of the batter.

Bake in a 350-degree oven for 1 hour and 25 – 30 minutes. After an hour use a piece of aluminum foil and place it over the banana bread to prevent over browning.

Usually, we add a buttercream type of frosting, but since the layer of bananas was added to the top we left the frosting off. However, after slicing a piece, I spread Nutella over it.

Yes, Nutella solves everything! It was ah-mazing!
