It’s the most wonderful time of the year. Christmas is my favorite time of the year for many reasons. Sometimes it’s hard to explain exactly how much I really love Christmas. This time of the year brings back so many wonderful memories, but it is also bittersweet. I’m reminded of spending every Christmas at my Grandma’s house from the time I was born until the age of 13. We continued to carry on the traditions she left with our family. She would always put out a certain bowl with Christmas candy, her tree would be in the same spot each year, and she baked the same delicious meals every year. We looked forward to heading to Columbus, Ohio each December to spend time with her, our cousins, and the rest of my Mom’s side of the family. It was always a wonderful time. Two years ago we lost my Mom. Christmas time now holds bittersweet feelings for all of us. Losing my Dad this spring put another damper into our Christmas spirits. However, my Mom and Grandma were big into Christmas. Knowing this, we continue on and carry their traditions, as well as make some of our own. Thankfully, I am married to a man who loves to cook and come up with creative new holiday dishes. We are doing our best to instill those same important Christmas memories in our boys, including rolling up our sleeves and doing some baking in the kitchen.

I’ve been craving a really good Christmas cookie with chocolate in it. I also wanted something with Nutella in it, because, hello, who doesn’t like Nutella? Plus, with it being on sale at Meijer for under $1.00 the past few weeks, I need some ways to use it! Peppermint is another ingredient that’s always popular around this time of the year, so I added it to the list. After sitting down and talking to Derrick about a cookie idea, he came up with a double chocolate Nutella & peppermint thumbprint cookie!

The main way I save money on food and my weekly meal plan is shopping for what it is on sale, and what coupons/mperks I have available to use. Since this is a great BOGO coupon, I decided to get two Country Crock Spreads to use in my homemade thumbprint cookie recipe.

After checking out via self-checkout, we came home, rolled up our sleeves, and got to work. After a while, the kitchen started to smell like a chocolate factory. The youngest, Zayd’n, likes to help out in the kitchen from time-to-time. He joined in on the baking fun, and helped put this cookie masterpiece together. Creating memories, baking in the kitchen, Christmas movies, hot chocolate, and enjoying family time are the things I love best about Christmas.

We’ve tested this recipe out and tried several cookies just to make sure it’s “worthy” to share! And it is! You can grab the recipe below, and make your own batch of this chocolatey goodness.

Double Chocolate Nutella & Peppermint Thumbprint Cookies

Ingredients:

  • 2 1/2 cups all-purpose flour
  • 6 tablespoons cocoa powder
  • 2 tablespoons instant espresso powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon sea salt
  • 1 cup Country Crock (at room temperature)
  • 1 cup granulated sugar
  • 3/4 light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 large eggs
  • 1 cup white chocolate chips
  • 1 cup dark chocolate chips
  • 1 cup mixed nuts, pistachios, and cranberries
  • Nutella for thumbprint filling

Directions:

In the bowl of a stand mixer fitted with the whisk attachment, add softened Country Crock spread, brown sugar, and granulated sugar. Beat on med-high until the mixture is light and fluffy.

Add eggs one at a time and mix first egg completely into the cookie batter before adding the second egg.

In a separate bowl add and mix the all-purpose flour, baking soda, and sea salt.

With the stand mixer on it’s lowest setting slowing add the flour mixture into the wet mixture. Mix ingredients until just incorporated.

Fold in the white and dark chocolate chips.

Next, fold in the dried cranberry, pistachio, and blended nut mixture. Stir until combined.

Line a cookie sheet with parchment paper and drop two tablespoons of cookie dough onto the palm of your hands. Roll the cookie dough into a round ball and place on the cookie sheet, repeat the process until you have 6 to 8 cookies on a cookie sheet at 2 inches apart.

Bake cookies at 375 degrees for 15 – 20 minutes.

Remove cookies from the oven and give them time to cool. While the cookies are still warm, use the back of your spoon or your thumb and press a declivity into the center of each cookie.

Fill each hollow with Nutella and candy cane sprinkles.

    okay now, these would not last in my house at all! I have three kids who are in love with Nutella! I ever feed my kids peanut butter because I don’t like it and always gave them Nutella instead, so now that is all they will eat too!

    I love that this recipe will help me use up the Nutella that I stocked up on during recent sales.     These look easy to make . I made fruit filled thumb prints for the first time ever a couple of weeks ago and they were delicious. I never knew you could use country crock butter! Good job!

    I absolutely love this recipe I might try it without nutella. My daughter is the only one who likes nutella. It. Looks delicious.

    Those look delicious, I usually make mine with jam but chocolate thumbprint cookies may become a new favorite. I’m baking cookies today and these just went on my list. I’ll also be making crinkle cookies! Thanks for the recipe, who doesn’t love chocolate?

    THese look amazing…..today is cookie making day here so we may try. Only thing is how important in the expressro powder?? I know I do not have any of that in hand.

      It just gives it a more chocolatey flavor. You can leave it out.

    I haven’t tried any cookies with Nutella as an ingredient. Seems like this might be the perfect recipe to start with because I also love peppermint!

    These cookies look amazing! I have been wanting to make a chocolate cookie this Christmas- and I absolutely love Nutella, so these are going to be perfect! I think I’ll go to Meijer today and pick up the ingredients 🙂
