Easy Oven Caramel Corn Recipe

Caramel corn is one of those things that we all seem to love to eat, but think it’s too much of a pain to make. Well, that’s not entirely true anymore, with Oven Caramel Corn. I’ve been making this recipe for a long time, and I have to say, it’s my favorite caramel corn recipe. It’s so simple to make, with some brown sugar, corn syrup, and popcorn, that you’ll wonder why you buy the stuff in the bag at the store ever again. You know what goes into it, so that can put your mind at rest. There’s nothing odd, and nothing that you can’t pronounce. That makes it a winner in my book.
Oven Caramel Corn with Simple Ingredients
I always start with freshly popped popcorn for my Oven Caramel Corn. The stuff in the microwave bags doesn’t work so well, as it has all kinds of flavorings and chemicals. But, if you want to use unbuttered microwave popcorn, you can cut the pop time down and have chemical free popcorn. (Place ⅓ of a cup of popcorn in a brown paper bag and fold the top over. Microwave 4 minutes, or until the popcorn slows popping.) I prefer to pop it in a pan for this recipe and use fresh popcorn. While you can use margarine in this recipe, I always use butter. Again, I opt for the least amount of chemicals. Brown sugar, salt, light corn syrup, and a bit of baking soda round out the ingredients list. All that’s left is to put it together and bake it on low in your oven, kind of like chex party mix.

Oven Caramel Corn Ingredients (1)

  • 15 C popped popcorn
  • 1 C packed brown sugar
  • ½ C margarine or butter
  • ¼ C light corn syrup
  • ½ t salt
  • ½ t baking soda

Heat oven to 200 degrees F.
Divide the popcorn between 2 lipped baking sheets.
In a medium saucepan, heat the brown sugar, butter, corn syrup, and salt until bubbly around the edges.
Continue cooking 5 minutes, stirring occasionally.
Remove from heat and add in the baking soda, until the mixture is foamy.
Pour over popcorn, stirring until the corn is well coated.
Bake, stirring every 15 minutes, for 1 hour.
Allow to cool and store in an airtight container.
