Happy Monday!

For this week the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1: Chicken and Pierogi Soup  $4.78

  • 1 lb chicken thighs
  • 3 cloves garlic (pantry)
  • 2 T olive oil (pantry)
  • 1 32 oz box Meijer chicken broth
  • 1 box Mrs. T’s mini pierogies
  • 2 carrots, thinly sliced (pantry)
  • 1 onion, diced (pantry)
  • ½ 10 oz bag NewStar flat-leaf spinach
  • Salt and pepper (pantry)

Directions:  In a Dutch oven over medium-high heat, place the chicken, garlic, carrots, and onions with the olive oil.  Cook until the onions turn clear. Add the chicken broth and reduce heat to a simmer. Simmer for 30 minutes.  Remove the chicken and shred the meat, discarding the skin and bones. Return the chicken to the pan. Add the pierogies and simmer for 15 minutes or until the pierogies are soft.  Add the spinach and stir. Season with salt and pepper, serve with crusty bread if desired.

Meal 2:  Pasta and Meatballs  $5.28

  • 2 jars Prego red pasta sauce, any variety
  • 1 t oregano (pantry)
  • ½ t basil (pantry)
  • 2 cloves garlic (pantry)
  • ½ bag Meijer frozen meatballs
  • 1 box Meijer pasta, any variety

Directions:  Place the sauce, seasonings, and meatballs in a slow cooker.  Cover and set to low for 6-8 hours. Prepare the pasta as directed on the package.  Serve the sauce and meatballs over the pasta.

Meal 3:  Baked Salmon with Roasted Cauliflower and Cucumber-Tomato Salad  $14.07

  • 1 lb fresh Atlantic salmon
  • 1 head cauliflower, cut into florets
  • 3 T olive oil (pantry)
  • Salt and pepper (pantry)
  • 1 greenhouse cucumber, sliced
  • 1 pkg Campari tomatoes, diced
  • 4 T olive oil (pantry)
  • 4 T apple cider or red wine vinegar (pantry)
  • Salt and pepper (pantry)

Directions:  Place the cucumbers and tomatoes in a bowl.  Mix with the 4 T olive oil and vinegar; season with salt and pepper.  Refrigerate for at least an hour. Place the cauliflower on a rimmed baking sheet and drizzle with the remaining olive oil.  Season with salt and pepper and roast in a 425°F oven for 15-20 minutes, until browned and tender. Place the salmon on a baking sheet and season with salt and pepper.  Bake in a 425°F oven for 10-15 minutes, until the fish flakes easily with a fork.

Meal 4:  Au Gratin Potatoes with Sausage  $4.69

  • 2 boxes Betty Crocker Au Gratin potatoes (plus ingredients per package)
  • 1 pkg Eckrich smoked sausage, cut into ¼” pieces

Directions:  Prepare the potatoes as directed for oven preparation.  Mix in the sausage before baking then bake as directed.

Meal 5:  Cheeseburger Pie  $2.99

  • 1 lb ground beef
  • 1 onion, diced (pantry)
  • Salt and pepper (pantry)
  • 1 C milk (pantry)
  • 2 eggs (pantry)
  • ½ C buttermilk baking mix (such as Bisquick) (pantry)
  • 1 C Kraft shredded cheddar

Directions:  Brown the beef and onion until no pink remains in the beef; drain well.  Lightly spray a 9-inch pie plate with nonstick spray. Place the beef mixture in the pie plate.  In a bowl, mix the milk, eggs, and baking mix. Pour over the meat mixture. Sprinkle with cheese.  Bake in a 400°F oven for 25 minutes or until a knife inserted into the center comes out clean.

Meal 6:  Baked Pork Chops with Baked Potatoes and Vegetables  $4.99

  • 1 lb (4) boneless center cut pork chops
  • Salt and pepper (pantry)
  • 1 box Meijer frozen vegetables
  • 4 Russet potatoes (from 5 lb bag), scrubbed and pierced
  • Toppings for baked potatoes (pantry)

Directions:  Place the potatoes in a 425°F oven and bake for 1 hour or until tender when pierced with a fork.  About 30 minutes before serving, place the pork chops on a baking sheet and season both sides with salt and pepper.  Bake in the oven with the potatoes for 30 minutes, turning over once, or until no pink remains in the center. Steam the vegetables to the desired doneness.  Top the potatoes as desired.
