This is the  week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Fall is in full swing and the produce department is showing it!  There are lots of squashes, apples, and all kinds of other delicious things.  And, the sales are on!  Check out these six meals for a happy and well fed family!

Meal 1: Beef Roast with Mashers and Vegetables  $12.46

  • 3 lb beef top round roast
  • 3 onions, chopped
  • 5 lbs red potatoes, peeled and chopped
  • Milk and butter for mashers (pantry)
  • 1 box Green Giant frozen vegetables

Directions:  Place the beef roast in a slow cooker with the onions.  Season with salt and pepper, cover, and set to low for 6-8 hours.  About 40 minutes before serving, put the potatoes in a large saucepan.  Cover with water and bring to a simmer for 30 minutes, until the potatoes are tender when pierced with a fork.  Mash with butter and milk to desired consistency.  Prepare the vegetables as directed on the package.  Save leftovers for tomorrow’s dinner.

Meal 2:  Shepherd’s Pie  $2.43

  • 3 C leftover beef, diced
  • 3 C leftover mashers
  • 2 eggs (pantry)
  • 1 bag Meijer frozen mixed vegetables
  • 2 pkgs Meijer brown gravy mix
  • 3 T Worcestershire sauce

Directions:  Mix the eggs and mashers and set aside.  Prepare the gravy, using the Worcestershire sauce as part of the water.  Mix in the leftover beef and mixed vegetables.  Pour into a casserole dish.  Top with mashers.  Bake in a 350°F oven for 1 hour, until bubbly.

Meal 3:  Italian Wedding Soup $7.38

  • 2 lb Jennie-O ground turkey
  • 2 eggs (pantry)
  • 1 C parmesan (pantry)
  • 1 C bread crumbs (pantry)
  • 2 t garlic, minced
  • 2 T onion, minced
  • 2 32 oz boxes Meijer chicken broth
  • 2 eggs (pantry)
  • ¼ C parmesan (pantry)
  • ½ bunch escarole, diced
  • Water, as needed

Directions:  In a bowl, mix the turkey, 2 eggs, 1 C parmesan, bread crumbs, garlic, and onion until well mixed.  Roll into meatballs the size of a grape or large olive and place on a plate.  Set aside.  In a stockpot, heat the chicken broth, adding water to replace any liquid lost.  Add the meatballs once the broth is simmering.  In a small bowl, mix the 2 remaining eggs with the ¼ C parmesan.  Drizzle into the soup once the meatballs start to float.  Add the escarole and serve.

Meal 4:  Pork Chops, Squash, and Apples  $6.06

  • 2 lb assorted pork chops
  • 1 ½ lb Jonathan apples, cored and chopped
  • 1 ½ lb butternut squash, seeded and chopped
  • 1 T olive oil or butter

Directions:  Place the pork chops in a deep sided saute pan over medium heat with the olive oil.  Brown on both sides, then add the apples and squash.  Cover, reduce heat, and cook for another 20-30 minutes, until the squash is tender.  Serve with bread, if desired.

Meal 5:  Roasted Chicken Thighs with Mac & Cheese and Vegetables  $4.49

  • 2 lb chicken thighs
  • ¼ t garlic salt
  • ¼ t onion salt
  • ¼ t oregano
  • ¼ ground thyme
  • ¼ t paprika
  • ¼ t ground black pepper
  • 2 boxes Meijer mac & cheese, plus butter and milk per directions
  • 1 bag Meijer frozen vegetables

Directions:  Place the chicken thighs in a baking dish.  Mix the spices and sprinkle over the top of the chicken.  Bake in a 350°F oven, uncovered, for 1 hour or until the juices run clear.  Prepare the mac & cheese and frozen vegetables as directed on the package.

Meal 6:  Sausage & Dirty Rice  $5.40

  • 1 pkg Eckrich smoked sausage, cut into coins
  • 2 boxes Zatarain’s Dirty Rice
  • ½ bag Meijer frozen peas

Directions:  Saute the sausage until browned.  Add the peas and rice, following the directions on the package for oil and water.

This week, these six delicious meals will cost you only $38.22!  What a great way to feed your family for less.
