Meijer Meal Planning Week 2/11: 6 Meals $45 Bucks

This is a new week, 2/11 of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1: Chicken Gnocchi Soup  $8.21

  • 2 lb chicken thighs
  • 2 t olive oil (pantry)
  • 2 carrots, diced (pantry)
  • 2 ribs celery, diced (pantry)
  • 1 onion, diced (pantry)
  • 2 cloves garlic, minced (pantry)
  • ½ t ground thyme (pantry)
  • ½ t rosemary (pantry)
  • 1 32 oz box Meijer chicken stock
  • 1 pkg Delallo mini potato gnocchi
  • ½ bag (10 oz) NewStar spinach
  • 1 C half n half (pantry)

Directions:  In a stockpot, sweat the onions, carrots, celery, and garlic.  When the onions are clear, add the chicken thighs, stock, thyme, and rosemary.  Simmer until the chicken falls off the bone, about 1 hour, adding water to replace any liquid that evaporates.  Remove the chicken, shred, and discard bones and skin.  Return the chicken to the pot and add the gnocchi.  When they float, add the spinach and stir in the half n half.  Serve with crusty bread if desired.

Meal 2: Tuna Noodle Casserole  $6.27

  • 1 bag Meijer no yolk extra wide egg noodles
  • 2 cans Starkist tuna, drained
  • 1 bag Meijer mixed frozen vegetables
  • 1 can Campbell’s Cream of Onion soup
  • Milk

Directions:  Boil the noodles per the directions on the package.  In a bowl, mix the drained noodles with the tuna, vegetables, and soup.  Add enough milk to make a creamy gravy.  Transfer to a 9×13 pan and bake in a 350°F oven for 1 hour.  

Meal 3: Pork Shoulder 2 Ways: Asian Lettuce Wraps  $13.94

  • 5 lb pork shoulder
  • 1 bag Mann’s Sunny Shores organic broccoli slaw
  • 1 T sesame oil (pantry)
  • 3 T soy sauce (pantry)
  • ½ t grated fresh ginger (pantry)
  • 1 clove garlic, minced (pantry)
  • 1 head Boston lettuce, separated into leaves

Directions:  Place the pork shoulder in a slow cooker and season with salt and pepper.  Cover and set to low for 6-8 hours.  While the pork is cooking, mix the slaw mix with the oil, soy sauce, ginger, and garlic.  Refrigerate for at least 2 hours.  When the pork is tender and cooked through, remove from the slow cooker and shred, discarding any fat and bones.  Return the meat to the slow cooker to keep warm.  Place some pork in each lettuce leaf and top with the slaw mix.

Meal 4: Pork Shoulder 2 Ways: Pork Rigatoni  $4.34

  • 3 cups leftover shredded pork (pantry)
  • 2 T olive oil (pantry)
  • 4 cloves garlic, minced (pantry)
  • ½ 16 oz pkg white mushrooms, cleaned and sliced
  • 1 onion, diced (pantry)
  • 1 28 oz can Meijer Naturals crushed tomatoes
  • Salt and pepper (pantry)
  • ½ t dried basil (pantry)
  • 1 box Meijer rigatoni pasta
  • Grated parmesan (pantry)

Directions:  Cook the pasta per the package directions.  In a saute pan, heat the olive oil over medium high heat.  Add the garlic, mushrooms, and onion and cook until caramelized.  Add the tomatoes, salt and pepper, and basil.  Cook 10-15 minutes, until the mixture is bubbling.  Add the cooked and drained pasta to the saute pan and serve with parmesan.

Meal 5: Easy Shepherd’s Pie  $5.43

  • 1 lb ground beef
  • 1 onion, diced (pantry)
  • 1 bag Meijer frozen mixed vegetables
  • 1 jar Meijer beef gravy
  • 2 T Worcestershire sauce (pantry)
  • ½ t ground mustard (pantry)
  • 1 pkt Idahoan Sour Cream and Chive mashed potatoes (and ingredients per package)

Directions:  Brown the ground beef and onion in a saute pan over medium heat; drain.  Add the mixed vegetables, gravy, and seasonings.  Bring to a simmer and place in a casserole dish.  Prepare the potatoes per the package and spread over the meat mixture.  Bake in a 350°F oven for 30-40 minutes, until the potatoes are browned.  

Meal 6: Orange Glazed Salmon with Steamed Broccoli and Rice  $6.93

  • 1 pkg Meijer frozen Pink Salmon, thawed and patted dry
  • 2 oranges (pantry)
  • 1 ½ lb broccoli
  • Butter if desired (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the salmon on a baking sheet.  Slice one orange and place the slices on the salmon.  Zest and juice the remaining orange, mix, and pour over the top.  Bake in a 425°F oven for 10-15 minutes, until the salmon is easily flaked with a fork.  Steam the broccoli as desired in the microwave or on the stove.  Place the rice in a pot with the water.  Bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed.  Serve the salmon with sauce over the rice.

This week, six delicious meals will cost only $45.12!
