Meijer Meal Planning Week 4/15: 6 Meals Under $38 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those to your final price.

Meal 1: Meatloaf Burgers with Green Beans  $8.47

  • 2 lb ground chuck
  • 2 eggs (pantry)
  • ½ C breadcrumbs (pantry)
  • 3 T ketchup (pantry)
  • 1 t oregano (pantry)
  • ½ t salt
  • ¼ t pepper
  • 4 Meijer hamburger buns
  • 1 ½ lbs green beans, rinsed and ends snapped
  • 1 T butter (pantry)

Directions:  In a bowl, mix the ground chuck, eggs, breadcrumbs, and seasonings.  Form into 4 patties and pan fry or broil to desired doneness. Steam the green beans in a pan with 1 inch of water.  Drain and top with the butter. Place the burgers on the buns and top with desired condiments.

 

Meal 2: Pork Loin with Asparagus and Rice  $5.26

  • 3 lb pork loin
  • 1 t oregano (pantry)
  • 1 t salt (pantry)
  • ½ t pepper (pantry)
  • 1 t rosemary (pantry)
  • ½ t marjoram (pantry)
  • 1 lb asparagus, ends trimmed
  • 2 C rice (pantry)
  • 4 C water (pantry)

Place the pork loin, fat side up, in a slow cooker.  In a small bowl, mix the seasonings. Pour over the loin, cover, and set to low for 6-8 hours.  30 minutes before serving, steam the asparagus to desired doneness. Place the rice and water in a saucepan.  Cover and bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed.

Meal 3: Pork Loin with Pasta  $4.00

  • 2 jars Ragu pasta sauce, any red variety
  • 1 t oregano (pantry)
  • ½ t garlic powder (pantry)
  • 2 C leftover pork loin, cubed
  • 1 box Meijer bowtie pasta

Place the pasta sauce, seasonings, and pork loin in a slow cooker.  Cover and set to low for 4-6 hours. Prepare the pasta as directed on the package.  Serve the sauce mixture over the pasta.

 

Meal 4: Curry Chicken with Rice and Vegetables  $4.48

  • 2 lb split chicken breasts
  • 1 bag Green Giant Valley Fresh vegetables, any variety
  • 3 T butter, melted (pantry)
  • 2 t curry powder (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the chicken in a casserole dish.  Pour the butter over the top and sprinkle with the curry powder.  Bake in a 375°F oven for 1 ½ hours, until no pink remains in the chicken.  Prepare the vegetables as directed on the package. Place the rice and water in a saucepan.  Cover and bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed.

 

Meal 5: Barbacoa Beef Tacos  $6.98

  • 2 lbs bottom round roast
  • 1 small can chipotle chiles in adobo
  • 3 cloves garlic (pantry)
  • 1 T ground cumin (pantry)
  • 1 t oregano
  • ½ t salt
  • ¼ t pepper
  • 1 C beef broth (pantry)
  • 1 20 ct La Banderita flour tortillas
  • ½ container Campari tomatoes, chopped

Directions:  Place the roast in a slow cooker.  Top with the chiles, garlic, and seasonings.  Add the beef broth, cover, and set to low for 6-8 hours.  Remove the meat, shred, discarding any fat, and return to the slow cooker.  Serve in the tortillas with tomatoes.

Meal 6:  Salmon with Fries and Vegetables  $7.98

  • 1 pkg Meijer frozen pink salmon
  • 1 lemon, cut into wedges (pantry)
  • ½ t salt (pantry)
  • ¼ t pepper (pantry)
  • 1 bag Meijer frozen vegetables, any variety
  • 1 bag Meijer frozen French fries

Directions:  Prepare the fries as directed on the package.  Steam the vegetables to desired tenderness. Place the salmon on a baking sheet.  Sprinkle with the salt and pepper. Bake in a 425°F oven for 10-15 minutes, until the fish flakes easily with a fork  Serve with the lemon wedges.
