Meijer Meal Planning Week 5/1: 6 Meals Under $38

This is the  week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Spring has sprung and the sales at Meijer are moving towards delicious meals on the grill! Here are six meals that use your grill, your oven, or your slow cooker making dinner easy on you!

Meal 1: Grilled Chicken with Salad $4.15

  • 1 lb boneless skinless chicken breast
  • Salt and pepper (pantry)
  • 1 head lettuce, chopped
  • 1 lb Roma tomatoes, chopped
  • 1 Ataulfo mango, peeled and chopped
  • Salad dressing of your choice (pantry)

Directions: Sprinkle salt and pepper on the chicken; grill over medium heat until no pink remains in the center, about 20-30 minutes. Place the lettuce, tomatoes, and mango in a bowl. Serve with salad dressing.

Meal 2: Onion Burgers with Fries $9.67

  • 1 ½ lb ground beef
  • Salt and pepper (pantry)
  • 4 Meijer hamburger buns
  • 2 Vidalia onions, diced
  • 2 T olive oil (pantry)
  • 8 slices Kraft Swiss cheese
  • 1 bag Ore Ida fries

Directions: Mix the ground beef with salt and pepper to taste. Form into 4 patties and set aside. In a saute pan, place the oil and onions, sauteing over medium heat until caramelized. Grill the burgers over medium heat until no pink remains in the center. Place the burger on a bun, top with two slices of cheese and onions. Prepare the fries according to package directions.

Meal 3: Balsamic Brown Sugar Pork Loin with Corn $6.43

  • 2 lb pork loin
  • ¼ C balsamic vinegar (pantry)
  • ½ C chicken broth (pantry)
  • 2 T soy sauce (pantry)
  • 3 T brown sugar (pantry)
  • ½ t cumin (pantry)
  • ½ t garlic powder (pantry)
  • ¼ t chili powder (pantry)
  • 8 ears Florida sweet corn, shucked

Directions: Place the pork loin in the slow cooker. In a bowl, mix the balsamic vinegar, broth, and soy sauce. In another bowl, mix the brown sugar, cumin, garlic powder, and chili powder. Rub the dry mix on the loin. Drizzle the wet mix over the top; cover and set to low for 6-8 hours. Just before serving, bring a large pot of water to a rolling boil. Add the corn and cook for 3 minutes, until a knife inserted into kernel produces a clear liquid. Serve hot.

Meal 4: Tortellini with Garlic Bread $6.49

  • jar Barilla pasta sauce, any variety
  • 1 bag Meijer frozen tortellini
  • ½ box New York Texas Toast

Directions: Place the sauce in a saucepan and heat over medium heat. Bring a large pot of water to a boil and add the tortellini. Boil until the tortellini until they float; remove and place in a bowl. Top with the sauce. Prepare the toast as directed on the package.

Meal 5: Chinese Spare Ribs with Rice $2.52

  • 1 lb pork spare ribs
  • 1 T ketchup (pantry)
  • 1 T honey (pantry)
  • 1 T soy sauce (pantry)
  • 1 t rice vinegar (pantry)
  • 1 t lemon juice (pantry)
  • 1 t ginger, grated (pantry)
  • 1 clove garlic, minced (pantry)
  • ¼ t Chinese Five Spice powder
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions: Mix the ketchup, honey, soy sauce, rice vinegar, lemon juice, ginger, garlic, and five spice powder in a bowl. Place the ribs in a slow cooker and top with mixture. Cover and set to low for 6-8 hours. 30 minutes before serving, place the rice and water in a large saucepan. Cover and simmer 20 minutes, until the water is absorbed. Serve the ribs over the rice.

Meal 6: Roasted Salmon with Asparagus and Baked Potatoes $8.32

  • 1 pkg Meijer frozen salmon, thawed
  • 1 lb fresh asparagus, rinsed and ends trimmed
  • 4 Russet potatoes, scrubbed and pierced
  • Butter (pantry)

Directions: Place the potatoes in a 425°F oven for 45 minutes, until tender when pierced with a fork. Place the salmon on a baking sheet and place in the oven for 10-12 minutes, until the fish flakes easily. Place the asparagus in a saute pan over medium high heat with 2 tablespoons of butter. Saute until the asparagus is tender.

This week, six fabulous meals will cost only $37.58! Ribs, salmon, and even tasty burgers are all on the menu this week!
