Meijer Meal Planning Week 6/26: 6 Meals $44 Bucks

This is the  week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE 

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

The Fourth of July is right around the corner, and the sales are HOT!  Check out these six great meals that will make your summer week easy!

Meal 1: Onion Burgers with Baked Beans  $7.92

  • 1 ½ lb ground beef
  • Salt and pepper (pantry)
  • 1 lb Vidalia onions, sliced into rounds
  • Condiments, as desired (pantry)
  • 1 pkg Meijer hamburger buns
  • 2 cans Bush’s Grillin Beans, any variety

Directions:  Form the ground beef into 4 patties.  Salt and pepper both sides.  Grill, broil, or pan fry to desired doneness.  Top with a slice of onion and place on buns with condiments.  Heat the beans until simmering.

Meal 2:  Steak and Salad with Homemade Ranch Dressing  $8.34

  • 1 lb boneless eye of round steaks
  • Salt and pepper (pantry)
  • 1 bag Dole Greener Selection salad mix
  • 1 yellow pepper, diced
  • ½ lb tomatoes on the vine, diced
  • ½ greenhouse cucumber, sliced
  • 1 C mayonnaise (pantry)
  • ½ C sour cream (pantry)
  • 1 clove garlic, finely diced (pantry)
  • Salt (pantry)
  • ¼ C fresh parsley, finely diced
  • 1 t dried dill (pantry)
  • 1 T chives, minced (pantry)
  • 1 t Worcestershire sauce (pantry)
  • ½ t white wine vinegar (pantry)
  • ½ t pepper (pantry)
  • ½ C buttermilk

Directions:  Season the steaks with salt and pepper on both sides.  Grill, broil, or pan fry to desired doneness.  Let rest 5 minutes and slice thin.  In a bowl, mix the salad mix, pepper, tomatoes, and cucumber.  Top with the steak.  In another bowl, whisk the remaining ingredients together and serve over the salad.  Leftover dressing can be refrigerated for up to a week.

Meal 3:  Bruschetta Dogs with Chips  $5.23

  • 1 pkg Ball Park Franks
  • 2 tomatoes on the vine, chopped
  • 1 clove garlic, minced (pantry)
  • 1 T balsamic vinegar (pantry)
  • 2 T olive oil (pantry)
  • 2 large leaves of basil, sliced thin
  • 1 pkg Meijer hot dog buns
  • 1 bag Meijer chips, any variety

Directions:  Grill or broil the hot dogs.  Toast or grill the buns until browned.  In a small bowl, mix the tomatoes, garlic, vinegar, oil, and basil.  Spoon over the hot dogs and serve with chips.

Meal 4:  Barbecued Chicken Breasts with Watermelon Salad  $10.26

  • 2 lbs split chicken breasts
  • 1 btl Sweet Baby Ray’s barbecue sauce
  • 1 sm red onion, diced
  • 1 lime, juiced
  • 2 T olive oil (pantry)
  • 1 seedless watermelon, flesh cubed or balled bite-sized
  • ½ greenhouse cucumber, diced
  • ½ C fresh mint leaves, minced
  • 1 C Athenos crumbled feta cheese

Directions:  Grill or bake the chicken breasts, basting with barbecue sauce until no pink remains near the bone and meat is cooked throughout.  In a large bowl, mix the remaining ingredients.

Meal 5:  Grilled Pork Chops with Fresh Corn Salad  $4.95

  • 1 lb center cut pork loin chops
  • 3 ears of corn, shucked
  • ½ C red onion, diced
  • 3 T apple cider vinegar (pantry)
  • 3 T olive oil (pantry)
  • Salt and pepper (pantry)
  • 4 large leaves basil, sliced thin

Directions:  Place the corn in boiling water for 3 minutes.  Place in cold water to chill and cut it off the cob into a bowl.  Mix with the onion, vinegar, oil, basil and season with salt and pepper to taste.  Chill for at least an hour.  Grill or broil the pork chops until no pink remains in the center.

Meal 6:  Grilled Ribs with Rice  $6.98

  • 2 lbs pork back ribs
  • 1 btl McCormick Bacon Chipotle Seasoning
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  The day before serving, coat the ribs in the seasoning and wrap tightly in plastic wrap.  Place on a plate in the refrigerator until ready to cook.  About 2 hours before serving, place on a rack in a baking dish and pour about a cup of water in the bottom of the pan.  Cover tightly with foil and bake on 325°F for 1 hour 45 minutes.  Remove foil and bake another 15 minutes.  Place the rice and water in a large saucepan.  Cover and bring to a simmer for 20 minutes or until the rice is tender and the water is absorbed.  Serve the ribs over the rice.
