Meijer Meal Planning Week 7/8: 6 Meals $37 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

Meal 1: Roasted Chicken with Wedge Caesar Salad  $7.22

  • 5 lb whole chicken, rinsed
  • Salt (pantry)
  • Pepper (pantry)
  • 1 lemon (pantry)
  • 1 head romaine lettuce, quartered lengthwise
  • ½ bottle Meijer Caesar dressing
  • ½ pkg Meijer shredded Parmesan

Directions:  Salt and pepper the cavity of the chicken.  Stuff with the lemon, place in a roasting pan, and place in a 425°F oven for 1 hour, until golden brown and the chicken, when measured in the thickest part of the thigh, reads 165°F on a meat thermometer.  Serve the salad by placing a quartered section of romaine on a plate. Drizzle with dressing and sprinkle with the shredded Parmesan. Refrigerate half of the chicken for the next meal.

Meal 2: Chicken Salad Sammies with Potato Chips  $5.48

  • ½ chicken, cubed with bones removed
  • ½ C mayonnaise (pantry)
  • Salt (pantry)
  • Pepper (pantry)
  • 1 4 pk Meijer Croissants, cut lengthwise
  • 1 bag Meijer potato chips

Directions:  In a bowl, mix the chicken and mayonnaise, adding more mayo if needed to desired consistency.  Season with salt and pepper to taste. Serve in the croissants with chips on the side.

Meal 3:  BBQ Country Ribs with Baked Beans  $6.71

  • 2 ½ lbs bone in country ribs
  • 1 bottle Open Pit barbecue sauce, any variety
  • 1 can Meijer baked beans, any variety

Directions:  Place the ribs in a slow cooker and top with the sauce.  Cover and set to low for 6-8 hours. Heat the beans in a saucepan, simmering for 15 minutes.  Serve with the ribs.

Meal 4:  Stuffed Peppers  $7.38

  • 4 green peppers, tops removed (and saved) and ribs scrapped out
  • 1 lb ground chuck
  • 1 C rice (pantry)
  • 2 C water (pantry)
  • 1 t oregano (pantry)
  • ½ t basil (pantry)
  • ½ t salt (pantry)
  • ¼ t pepper (pantry)
  • 1 8 oz can Meijer tomato sauce

Directions:  Place the rice and water in a saucepan.  Cover and bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed.  Allow to cool. (This can be done the night before.) In a bowl, mix the meat and seasonings. Add enough rice so the meat holds together well.  Stuff the peppers and place in a baking dish. Place the tops on, pressing down to hold them on. Cover and bake in a 350°F until the peppers are tender and the meat is cooked throughout.  Top with the tomato sauce and bake another 10 minutes. Serve hot.

Meal 5:  Chicken-Topped Salad  $5.06

  • 1 lb chicken thighs
  • Salt (pantry)
  • Pepper (pantry)
  • 1 bag Dole salad blend
  • 1 avocado, peeled and diced
  • ½ bottle Meijer salad dressing, any variety

Directions:  Place the chicken in a baking dish, season with salt and pepper, and bake in a 375°F oven for 45 minutes or until a thermometer reads 165°F when placed in the meat.  Remove from the dish and shred, discarding skin and bones. Prepare the salad by mixing the greens with the avocado. Top with the chicken and dressing.

Meal 6:  Smoked Sausage with Macaroni & Cheese  $4.50

  • 1 pkg Eckrich smoked sausage, cut into ½ inch pieces
  • 2 t butter (pantry)
  • 2 boxes Kraft Mac & Cheese (plus ingredients per package)

Directions: In a saute pan, place the butter and sausage over medium-high heat.  Saute until browned. Remove from heat. Prepare the macaroni and cheese as directed on the package.  Add the sausage and serve.
