  • 1 ½ lb ground beef
  • 4 Meijer hamburger buns
  • ½ pkg Meijer shredded cheese, any variety
  • ½ bottle barbecue sauce, any variety (pantry)
  • 4 ears corn

Directions:  Form 4 patties from the ground beef and season lightly with salt and pepper.  Grill or broil to desired doneness, basting with the barbecue sauce when you flip the burgers.  Top with the shredded cheese and allow to melt.  Serve in the buns.  For the corn, bring a large pot of water to a rolling boil.  Add the corn and cook for 3 minutes.  Remove and serve with butter, if desired.

Meal 2:  Crab Cakes with Salad $7.32

  • 1 pkg Louis Kemp imitation crab
  • 1 pkg Philadelphia cream cheese, softened
  • 1 small onion, diced (pantry)

  • Oil for frying (pantry)
  • 1 red pepper, diced and split
  • ½ lb vine ripe tomatoes
  • 1 pkg Dole Salad mix, any variety
  • Salad dressing (pantry)

Directions:  In a bowl, mix the imitation crab, cream cheese, onion, and half of the diced pepper.  With damp hands, form into 4 patties and coat with the bread crumbs.  Season with salt and pepper, then fry in a deep pan with 1 inch of oil in the bottom, heated over medium high heat.  Cook until golden brown on both sides, then allow to drain on a paper towel lined plate.  Place the remaining ingredients in a bowl and serve on the side.

Meal 3:  Slow Cooker Teriyaki Ribs with Rice and Vegetables  $5.23

  • 2 lbs country ribs
  • ½ C soy sauce (pantry)
  • 2 T honey (pantry)
  • 3 T minced garlic (pantry)
  • 1 large onion, sliced (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • 1 bag Meijer frozen vegetables, any variety

Directions:  Place the ribs and onion in a slow cooker.  In a bowl, mix the soy sauce, honey, and garlic; pour over the ribs and onion.  Cover and set to low for 6-8 hours.  Place the rice and water in a large saucepan; cover and bring to a simmer for 20 minutes or until the water is absorbed.  Prepare the vegetables as directed on the package.

Meal 4:  Slow Cooker Peanut Chicken with Rice $2.99

  • 1 ½ lb boneless skinless chicken breasts, cut into bite sized pieces
  • 1 onion, diced (pantry)
  • ½ C crunchy peanut butter (pantry)
  • ½ C chicken stock (pantry)
  • ¼ C soy sauce (pantry)
  • 2 T honey (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the chicken and onions in a slow cooker.  In a bowl, mix the peanut butter chicken stock, soy sauce, and honey; pour over the chicken and onions.  Cover and set to low for 6-8 hours.  Place the rice and water in a large saucepan; cover and bring to a simmer for 20 minutes or until the water is absorbed.  Stir the chicken mixture well and serve over the rice.

Meal 5:  Slow Cooker Bratwurst Mac & Cheese  $6.36

  • 1 pkg Johnsonville brats, partially frozen
  • 2 ½ C beef stock, divided (pantry)
  • 1 can Hunt’s Fire Roasted Diced Tomatoes
  • ½ lb Meijer green box elbow macaroni
  • 3 T butter (pantry)
  • 2 T flour (pantry)
  • 2 C milk (pantry)
  • 2 C Meijer shredded sharp cheddar cheese

Directions:  Cut the partially frozen brats into rounds.  Place the brats, 2 C of the beef stock, and tomatoes (including juice) in a slow cooker.  Cover and set to low for 6-8 hours.  About 40 minutes before serving, turn the slow cooker to high and add in the elbow macaroni.  Cover and check pasta every 5-10 minutes for doneness.  While the pasta is cooking, melt the butter in a medium saucepan over medium heat.  Add the flour, stirring to remove lumps and cook for 1 minute.  Add in the beef stock and milk slowly, continually stirring.  Once the mixture thickens slightly add the cheese a little bit at a time, stirring to prevent sticking.  Once all of the cheese is melted, and the pasta is done, add the cheese to the slow cooker and stir well.  Serve hot.

Meal 6:  Corndog Casserole  $6.01

  • 2 pkgs Jiffy cornbread mix, plus ingredients per package
  • 1 pkg Ball Park Beef Franks
  • ½ bag Meijer frozen sweet corn
  • 1 pkg Meijer shredded sharp cheddar

Directions:  Brown the franks in a pan until lightly brown on all sides.  Remove from the pan and set aside.  In a bowl, mix the cornbread with the ingredients listed on the package, as well as the corn and half of the cheddar.  Spray a 13×9 baking pan with nonstick cooking spray.  Pour ½ of the batter in the pan.  Arrange the hot dogs horizontal to the small side of the pan so they are evenly spaced across the pan.  Top with the remaining batter.  Bake as directed according to the package.  Top with the remaining cheese and allow to melt in the oven for 2 minutes.  Serve by cutting so that each slice of cornbread has a full hot dog.  Serve with condiments, as desired.

This week, six amazingly delicious and easy dinners are only going to cost a whopping $32.78!
