Meijer Meal Planning Week 8/31: 7 Gluten Free Meals Under $60

This is the fourth week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers and it’s all about Gluten Free Meals. I’m still working and tweaking this system, so if you have any feedback, please let me know! For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $60, along with a few things from your pantry!  We aren’t talking everything from a box either!  These are pretty healthy meals, at a low Meijer price that will be pretty quick and easy to make any night of the week.

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates 8/31-9/6)

Prices are so good at Meijer this week, I came up with seven meals for under $50! Get everything you need for a whole week and still have some change left over.

Meal 1 – Crustless Quiche $6.49

Bob Evans Sausage
1 dozen eggs
1 onion, diced (pantry)
1 pkg shredded Meijer Swiss cheese
2 C half n half or whole milk (pantry)

Directions: Heat oven to 425°F. Brown the sausage with the onions, breaking up the sausage into small pieces. Place in a greased 9×13” pan. Sprinkle with the cheese. Whisk the eggs and half n half until well incorporated. Pour over the sausage mixture. Bake in heated oven for 20-25 minutes, until a knife inserted into the center comes out clean. Serve hot.

Meal 2 – Stuffed Tomatoes $6.18

2 cans Starkist tuna, drained
⅓ C mayonnaise (pantry)
1 pkg Compari tomatoes
1 pkg Kraft cheddar cheese slices

Directions: Mix the tuna and mayonnaise. Season with salt and pepper if desired. Cut the very top of the tomatoes and scoop out the interior. Fill with the tuna salad and top each tomato with a slice of cheese. Place in a pan and put under the broiler in your oven until the cheese is melted.

Meal 3 – Coca Cola Chicken and Salad $7.57

2 lb chicken thighs
2 T Worcestershire sauce (pantry)
1 C ketchup (pantry)
1 C Coca Cola (pantry)
1 bag Dole Salad Blend
1 cucumber
½ pkg Compari tomatoes
salad dressing of your choice (pantry)

Directions: Place the chicken in an oven safe dish. In a small bowl, mix the Worcestershire, ketchup, and cola. Pour over the chicken. Cover with aluminum foil and bake in a 350°F oven for 1 ½ hours, until tender. Mix the remaining ingredients in a bowl. Serve together.

Meal 4 – Sausage and Potatoes $8.28

1 pkg Meijer Bratwurst, cut into pieces
2.5 lbs Klondike Rose potatoes, sliced or diced
1 pkg Baby Bella Mushrooms, diced
3 T olive oil (pantry)
1 pkg SteamFresh veggies, any variety

Directions: Place the olive oil in a heavy skillet on medium heat. When warm, add the sausage and saute until browned on the outside. Add the potatoes and mushrooms; stir. Cover and saute until potatoes start to turn tender. Remove the lid and increase heat to medium high. Saute until potatoes start to crisp. Follow the directions on the SteamFresh veggies. Serve together, hot.

Meal 5 – Nachos $8.99 (one of our favorite meals!!)

1 bag Meijer tortilla chips
1 can Old El Paso Refried Beans
1 lb ground round
1 pkg taco seasoning (pantry)
1 pkg Meijer shredded cheddar cheese

Directions: Heat the beans in a small saucepan. In a saute pan, brown and drain the ground round and season with the taco seasoning. For each serving, place the chips in a bowl. Top with remaining ingredients.

Meal 6 – Baked Chicken, Veggies, and Baked Potatoes $5.50

2 lbs chicken thighs
seasonings of choice (pantry)
1 pkg SteamFresh veggies
4 Klondike Rose potatoes
butter (pantry)

Directions: Place the chicken in a baking dish and sprinkle with seasonings of your choice. Cover with foil and bake in a 350°F oven for 1 hour or until tender and cooked through. At the same time, wash the potatoes and prick with a fork. Place in the oven with the chicken and bake until tender. Follow directions on the veggies. Serve hot.

Meal 7 – Chef Salad $6.24

1 bag Dole Salad Blend
½ pkg Compari tomatoes, diced
1 cucumber, diced
¼ lb Virginia baked ham, diced
1-2 hard cooked egg (pantry)
salad dressing of your choice (pantry)

Directions: Place all ingredients in a bowl. Serve.

You can feed your family gluten free this week, seven tasty meals, for a mere $49.25! How awesome is that?
