South of the Border Turkey Hand Pies

Can you believe we are counting down to Thanksgiving and Christmas?! I wait all year for my favorite season: the holidays! Christmas music, food, and being surrounded by people I love is pretty awesome! Thanksgiving is just about a week and a half away, and I’m counting the days until it’s Turkey time. We usually have traditional foods like Turkey, mac & cheese, greens, dressing, etc., etc. However, since my husband is very creative in the kitchen and loves to add new items to our menu, he came up with this idea, let’s add a little flavor to the menu. Flavor as in with a Latin twist.

Now, you might be thinking, oh yeah, I’m sticking with the traditional Thanksgiving dinner. I totally get that. However, you know you will have a ton of leftover turkey. And if you’re like me, I can only do leftovers for so long. Thankfully, with Derrick in the kitchen, we can use our leftover turkey to make new dishes. Such as the South of the Border Turkey Hand Pies.

Yes, south, as in South of the border! We culled the flavors from Central and South America to put this one together. And we think you’re going to like it too.  We grabbed some black beans, peppers, green onions, fresh off the cob sweet corn, cilantro, tomatillos, and of course leftover turkey. Yep, we took the turquía and the rest of the fixings and stuffed it all into pastry dough, talk about a great way to reinvent leftovers. Wasn’t that so cool of us?

Ingredients:

  • 2 cups chopped turkey
  • 1/2 cup sweet corn kernels
  • 1/2 cup green onion, sliced
  • 1/2 cup cilantro, chopped
  • 1/3 cup diced tomatoes
  • 1 cup shredded Mexican cheese
  • 1 cup Mexican cooking sauce
  • 1 cup La Morena® Beans
  • 1 7 oz can La Morena® Chipotle Peppers in Adobo
  • 2 tablespoons La Morena® pickled jalapeño peppers

You will also need:

  • 4 prepared pastry dough
  • 1 egg
  • 1 tablespoon heavy cream or milk

Toppings:

  • 1 cup diced tomatillos, served raw
  • 1/2 cup sliced green onion, diced and served raw
  • 1/2 cup chopped cilantro, chopped and served

Directions:

In a large bowl add chopped leftover turkey, sweet corn kernels, green onion, cilantro, diced tomatoes, shredded Mexican cheese, Mexican cooking sauce, La Morena® black beans, La Morena® Chipotle Peppers in Adobo, and La Morena® pickled jalapeño peppers. Mix ingredients well.

Remove two pastry pie shells, and lay them flat. Cut out a two 4″x6″ square, and lay them side by side.

Spread a tablespoon of Mexican cooking sauce onto each pastry square and spread it around evenly.

Spoon two tablespoons of the turkey hand pie filling onto one pastry square.

Pull the extra pastry pie shell over the filling and crimp and tuck the sides.

Place parchment paper on top of a cooking sheet.

Make the egg wash by adding one (1) egg and one (1 tablespoon) of heavy cream or milk into a small bowl and whisk until mixed.

Using a baker’s brush, coat the top pastry dough with egg wash.

Transfer turkey hand pies to the cookie sheet with parchment paper.

Place into a preheated 350-degree oven and bake for 15 – 20 minutes.

Remove pies from the oven and allow the hand pies to cool.

    How much tomatilloes? Are they used raw?

      Hi Michelle. I updated the recipe. I used about a cup, but you can use more or less depending on your likes or taste. I used them as a super fresh topping and I also used them raw. I think the tomatilloes add a nice authentic flavor. Thank you.
